Emulsifying salt-free processed cheese products as well as methods of preparing emulsifying salt-free processed cheese products are provided. The emulsifying salt-free processed cheese products are prepared with modified starch containing amylopectin and substantially no amylase and without emulsifying salts. The emulsifying salt-free processed cheese products are advantageously resistant to separation during heating and retain desirable organoleptic properties, such as texture and flavor, without using emulsifying salts.Se proporcionan, productos de queso procesado libre de sal emulsionante así como los métodos para preparar los productos de queso procesado libre de sal emulsionante. Los productos de queso procesado libre de sal emulsionante se preparan con almidón modificado que contiene amilopectina y prácticamente sin amilasa y sin sales emulsionantes. Los productos de queso procesado libre de sal emulsionante son ventajosamente resistentes a la separación durante el calentamiento y conservan las propiedades organolépticas convenientes, tales como textura y sabor, sin utilizar sales emulsionantes.
