PROBLEM TO BE SOLVED: To provide an acidic oil-in-water emulsified food, improved in an acid taste and irritating smell without impairing the flavor of a raw material by a peculiar cereal odor and a heated odor that are the raw material smell derived from a hydrolyzate of wheat gluten.SOLUTION: An acidic oil-in-water emulsified food improved in an acid taste and irritating smell without impairing the flavor of a raw material as compared with an acidic oil-in-water emulsified food to which a hydrolyzate of wheat gluten is added, is obtained by adding a heated compound obtained by adding saccharides to the hydrolyzate of the wheat gluten followed by heating, to the acidic oil-in-water emulsified food such as mayonnaise and emulsion dressing.COPYRIGHT: (C)2014,JPO&INPIT【課題】本発明は、小麦グルテンの加水分解物由来の原料臭である独特の穀物臭や加熱臭により素材の風味を損なうことなく、酸味、刺激臭の改善された酸性水中油型乳化食品を得ることを課題とする。【解決手段】小麦グルテンの加水分解物に糖類を加えて加熱して得られる加熱化合物をマヨネーズや乳化型ドレッシングなどの酸性水中油型乳化食品に添加することで、小麦グルテンの加水分解物を添加した酸性水中油型乳化食品に比べて、素材の風味を損なわずに、酸味、刺激臭がより改善された酸性水中油型乳化食品が得られる。【選択図】なし
