Disclosed is a method for manufacturing red ginseng slices by coating sugared and dried red ginseng slices with fruit powder to add flavors and nutrients from fruit. The fruit power-coated red ginseng slices are manufactured by the following steps: preparing fruit powder of 30-300 mesh in size； cutting or slicing raw ginseng into fixed-size pieces and steaming at temperatures of 40-75°；C for 4-9 hours； sugaring the steamed red ginseng in soaking syrup composed of oligosaccharide, honey and fructose； drying the sugared red ginseng at temperatures of 40-70°；C for 5-15 hours； and coating the dried red ginseng with the fruit power at a red ginseng-powder weight ratio of 1: 0.01-0.3. The said fruit powder is derived from blueberry, blackberry, kiwi, cheery, strawberry, banana, pineapple, persimmon, tangerine, apple, orange, citron, pear, peach, etc. and the said soaking syrup is a mixture of 20-40 wt% of oligosaccharide, 10-30 wt% of honey and 40-70 wt% of fructose. The fruit powder-coated red ginseng slices as prepared are intended to provide nutrients from fruit i.e., mineral, vitamin C, and the like as well as the taste and flavors of fruit.본원 발명은 당침 후 건조시킨 홍삼절편에 과일 분말을 도포시켜 과일의 영양과 맛을 함께 느낄 수 있는 홍삼절편을 제조하는 것이다.상기 과일분말을 도포시킨 홍삼절편은 상기 홍삼절편은 과일분말을 30~300메쉬의 크기로 분말화 하고, 수삼을 일정한 크기로 썰거나 슬라이스하여 40~75℃의 온도에서 2~9시간 동안 증숙한 다음, 상기 증숙된 홍삼을 올리고당, 꿀 및 과당으로 구성된 당침액에 당침하며, 상기 당침된 홍삼을 40~70℃의 온도에서 5~15시간 동안 건조시키고, 상기 건조된 홍삼을 홍삼과 과일분말을 중량대비 1 : 0.01~0.3의 비율로 도포하여 제조한다. 상기 과일분말에 사용되는 과일은 블루베리, 블랙베리, 키위, 체리, 딸기, 바나나, 파인애플, 감, 감귤, 사과, 오렌지, 유자, 배, 복숭아 등으로부터 제조하며, 상기 당침액은 올리고당 20~40중량%, 꿀 10~30중량%, 과당 40~70중량%의 비율로 혼합된 당침액을 사용한다.이와 같이 제조된 과일분말이 코팅된 홍삼절편은 과일의 맛과 향 뿐만 아니라 과일의 영양성분인 무기질 및 비타민 C 등의 영양소를 홍삼과 함께 섭취할 수 있도록 하기 위한 것이다.
