PROBLEM TO BE SOLVED: To provide a method for producing a tangle boiled down with soy sauce, capable of being produced in a shorter time than those of conventional methods, also having less loss of polysaccharides contained in the tangle and having a non-conventional texture, and the tangle boiled down with the soy sauce produced by the method.SOLUTION: This method for producing the soft textured tangle boiled down with the soy sauce is provided by using the wet tangle without passing through a drying process as a raw material, cleaning with water at a normal temperature or a middle temperature, then impregnating in seasoning liquid containing the soy sauce and a sweetening agent, and heating.COPYRIGHT: (C)2012,JPO&INPIT【課題】従来の方法より短時間で製造することができ、しかも、昆布に含まれる多糖類の損失が少なく、今までにない食感の昆布佃煮の製法と、この製法により製造された昆布佃煮の提供をする。【解決手段】乾燥工程を経由していない湿潤昆布を原料とし、常温ないし中温の水で洗浄した後、醤油および甘味料を含む調味液に含浸して熱するようにした。【選択図】図1
