The present invention- relates to modified fermentation process using isolated and characterized yeast consortium to significantly improve the fermentation process in many formulations such as Asava, arishta, wines, medicated wines etc. This invention gives acceptable batch to batch uniformity in terms of uniform physicochemical parameters within reference range. The fermented product has acceptable organoleptic properties. This invention improves medicinal value of the formulations with stability and better clinical outcome when used. This invention reduces fermentation time by 4-5 folds thereby increasing the production capacity of the production unit. All problems associated with fermentation such as contaminating microorganisms, failure to utilize sugar, generation of odd flavors and test, excessive sourness, compromised organoleptic properties that need obligatory modification, incomplete fermentation, and deformation of bottles due to generation of gases after bottling were not found. This invention gives optimized Asava/Arishta formulations.
