PROBLEM TO BE SOLVED: To provide a method for producing agar capable of being distributed at normal temperatures and being preserved for a long period of time without impairing the fresh taste, flavor or resilience which the agar can originally have, and particularly without reducing the elasticity.SOLUTION: The method for producing agar includes: a step 1 for measuring an agar raw material (a measuring step) a step 2 for boiling the agar raw material (a boiling step) a step 3 for filtering agar stock solution (a filtering step) a step 4 for transferring the agar stock solution to a boiling pot (a transfer step) a step 5 for adjusting a pH value of the agar stock solution (a pH adjusting step) a step 6 for filling a container with the agar stock solution (a filling step) and a step 7 for cooling and coagulating the agar stock solution in the container (a cooling/coagulating step). In the step 5 (the pH adjusting step), the pH value of the agar stock solution is adjusted in the range from 3.0 to 6.5 by blending a pH adjuster in the agar stock solution, by which the agar stock solution is sterilized.COPYRIGHT: (C)2012,JPO&INPIT【課題】 寒天の常温流通や長期保存を可能にすると共に、寒天が本来持ち得た生の食味、風味、弾力等を損なうことなく、特に、弾力性(ぷりぷり感)を低下させることのない寒天の製造方法を提供すること。【解決手段】 本実施の形態に係る寒天の製造方法は、寒天原料の計量を行う工程1(計量工程)と、寒天原料の煮沸を行う工程2(煮沸工程)と、寒天原液の濾過を行う工程3(濾過工程)と、寒天原液を煮釜に移す工程4(移送工程)と、寒天原液のpH値を調整する工程5(pH調整工程)と、寒天原液を容器に充填する工程6(充填工程)と、寒天原液を容器ごと冷却し、凝固させる工程7(冷却・凝固工程)と、を有している。工程5(pH調整工程)では、pH調整剤を寒天原液に混合することにより、寒天原液のpH値を3.0以上かつ6.5以下に調整し、これにより、殺菌処理を行う。【選択図】図1
