The present invention provides: a production method of a salted and fermented shrimp extract which comprises a step of naturally fermenting salted and fermented shrimp in an underground tunnel, a step of freeze-drying and pulverizing the salted and fermented shrimp, and a step of adding alcohol to the pulverized salted and fermented shrimp for extracting； the salted and fermented shrimp extract produced by the method； and a pharmaceutical composition and health food composition containing the salted and fermented shrimp extract.
