The present invention provides a manufacturing method of extract of salted and fermented shrimp, which comprises a step of naturally fermenting salted and fermented shrimp in a cave, a step of freezing and drying the fermented shrimp and powderizing, and a step of extracting the powdered fermented shrimp by adding alcohol； extract of salted and fermented shrimp manufactured thereby； a pharmaceutical composition including the extract of salted and fermented shrimp； and a health food composition.
