The present invention provides a preparation method of pickled food which comprises the following steps: obtaining a plant extract of at least one material selected from the group consisting of bitter gourd, mulberry leaves, and sprouts barley; adding the obtained plant extract to a raw material to be pickled as pickling water and immersing the raw material; and preparing the pickled food by aging the raw material to be pickled immersed in the above-mentioned pickling water.
