The present invention relates to a method for manufacturing dried noodles aged at a low temperature. The manufacturing method of the present invention comprises: a step of making a mixture by mixing 100 parts by weight of flour and 5-10 parts by weight of refined salts; a paste step of mixing 100 parts by weight of the mixture with 35-45 parts by weight of purified water to make a paste; a first rolling step of rolling the paste generated in the previous step; a low temperature aging step of aging the paste rolled in the previous step at a low temperature; a second rolling step of re-rolling the paste aged in the previous step; a molding step of injecting the paste secondarily rolled in the previous step into an extruder to extrude and mold noodles; a drying step of drying the noodles molded in the previous step; and a cutting and packaging step of cutting the noodles dried in the previous step by a predetermined length, and packing the same.
