PROBLEM TO BE SOLVED: To provide a method for producing ice cream having peculiar perfume and taste but not imparting unpleasant feeling to a utilizer by the taste and smell peculiar to ripe sushi (sushi seasoned with vinegared fish) by aggressively utilizing the boiled rice remaining when producing the ripe sushi.SOLUTION: The method for producing the ice cream includes the step (S1) for separating the content of an egg into albumen and yolk, the step (S2) for whisking the albumen, the step (S3) for mixing the yolk with sugar, the step (S4) for whisking raw cream, the step (S5) for mixing the yolk, the sugar, the albumen and the boiled rice for the ripe sushi with the raw cream, and the step (S6) for freezing the kneaded product of the raw cream, the yolk, the sugar, the albumen and the boiled rice for the ripe sushi.
