PROBLEM TO BE SOLVED: To provide delicious rice easy to eat in general like polished rice while retaining a nutritive value which rice holds as much as possible, and abundant in dietary fiber so as to contribute to peoples health promotion.SOLUTION: Rice is such that: a taste degree measured by a taste degree meter is 58 or more a total content of dietary fiber of raw rice is 1.7 g or more per 100 g a yellowness of boiled rice is 32 or less a cracking ratio of rice grains (the number of cracked rice grains/the number of uncracked rice grains) is 0.3 or less and a length of boiled rice grain to a length of raw rice before boiling (a span length of boiled rice grain/a length of raw rice before rice cooking) is 1.7 times or more.
