PROBLEM TO BE SOLVED: To provide a molded meat processed food which can satisfy all of Umami and flavor such as juicy feeling, delicious appearance owing to a puffy thickness, and further reduction of a cooking time, and to provide a method for producing the same.SOLUTION: A molded meat processed food has a cavity inside a molded body. As the molded meat processed food, hamburger or meat cake is preferable. A method for producing the molded body includes: a step of filling an outer part feed section of a filling-wrapping machine with ingredients a step of making a content feed section of a filling-wrapping machine unfilled, and putting into a state of making gas flow into the content feed section and a step of forming the molded body having a cavity by discharging ingredients from the outer part feed section while keeping a state of making gas flow into the content feed section.SELECTED DRAWING: Figure 1COPYRIGHT: (C)2017,JPO&INPIT【課題】ジューシー感等の旨味や風味、ふっくらとした厚みによる見た目のおいしさ、及び調理時間のさらなる短縮、これらすべてを満足できる成形肉加工食品を提供する。さらに、該成形肉加工食品の製造方法を提供する。【解決手段】成形体の内部に空洞を有する、成形肉加工食品とする。成形肉加工食品としてはハンバーグ又はメンチカツであることが好ましい。また、成形体の製造方法として、中種を包餡機の外側部供給部に充填する工程と、包餡機の中身供給部を未充填とし、かつ該中身供給部内に気体が流入できる状態とする工程と、中身供給部内に気体が流入できる状態を維持して外側部供給部から中種を吐出させて、空洞を有する成形体を形成する工程と、を有する方法とする。【選択図】図1
