PROBLEM TO BE SOLVED: To provide a method for producing a fish and shellfish processed food which has a nutrient balance close to an original nutrient balance of fish and shellfish, and has a high edible percentage so as not to require a disposal step.SOLUTION: A method for producing a fish and shellfish processed food includes: a cutting step of cutting frozen fish and shellfish 1 which are obtained by freezing an integrated product of at least one part of a bone part and a skin part with a meat part of fish and shellfish as it is and a step of heat treating cut meat pieces 2.
