A process of producing dagway (Saurauia subglabra) vinegar comprising the steps of: a. Preparing the ingredients by gathering, cleaning and washing the matured dagway fruits thoroughly b. Mixing 8 kilos of the fruit to 8 liters of water in a suitable cooking container, preferably stainless steel and enamel wares except aluminum wares c. Boiling the mixture into 30 minutes d. Straining the mixture separating the pulp from the decoction, setting aside the decoction e. Extracting juice from about 4 meters fresh sugar cane and setting aside f. Mixing 2 cups of sugar cane extract to every 4 liters of decoction in step e g. Boiling the solution for another 30 minutes h. Cooling the solution i. Pouring said solution in a suitable storage container tightly covered with clean cloth j. Aging the solution for one month and k. Packaging of the solution in sterilized bottles.
