PURPOSE: A producing method of rice noodles containing rice bran powder is provided to use rice bran containing dietary fibers, and to prevent the noodles from cutting. CONSTITUTION: A producing method of rice noodles containing rice bran powder comprises the following steps: mixing japonica rice and indica rice(S1)； washing the mixed rice with purified water, and soaking before crushing into 150~200meshes powder(S2)； pan-roasting the rice bran(S3)； adding water to the mixed rice powder, and steaming(S4)； mixing the steamed rice powder with 10% of rice bran and 3% of starch, and kneading(S5)； molding cooked noodles with the obtained paste using a mold frame； cutting the noodles(S6)； and rapidly freezing the noodles for more than 2 days(S7).쌀겨가 함유된 쌀면 및 이의 제조방법에 관한 것으로서, 특히 아밀로오스 함량이 18 - 20% 인 자포니카 종의 쌀 분말과 아밀로오스 함량이 28% 정도인 인디카 종의 쌀 분말과 그리고 쌀눈이 포함된 쌀겨를 포함하는 쌀면 및 이의 제조방법에 관한 것이다.본 발명에 따른 방법으로 제조한 쌀면을 제조하게 되면, 쌀의 영양소 대부분과 풍부한 식이섬유를 포함하는 미강을 사용하게 되어 충분한 영양분 섭취가 이루어지게 되어 인체의 에너지 대사를 촉진하여 인체의 건강에 유익하게 되는 효과가 있다.
