PURPOSE: Fried shrimp with chili sauce, and a producing method thereof are provided to remove the fishy smell of shrimp, and to secure the crunchy texture of the fried shrimp for a long time. CONSTITUTION: A producing method of fried shrimp with chili sauce comprises the following steps: removing intestines of fresh shrimp and washing(S1); mixing 88~92wt% of refined rice wine, 6~8wt% of spring onion roots, and 2~4wt% of crushed ginger for obtaining refined rice wine sauce(S2); soaking the washed shrimps in the refined rice wine sauce for 1~2hours(S3); cutting the back of the soaked shrimp, and coating with potato starch(S4); frying the shrimp coated with the potato starch using cooking oil at 170~180deg C for 20~30second(S5); mixing tomato ketchup, water, a chili extract, sugar, mince garlic, and other ingredients to obtain the chili sauce(S6); and mixing 85~90wt% of fried shrimp with 10~15wt% of chili sauce(S7).본 발명은 음식의 주, 부재료로 널리 사용되는 새우를 짧은 시간 튀겨낸 후 칠리소스에 버무리는 것으로,종래의 새우칠리소스의 단점이였던 새우의 비릿함을 제거하고, 장기간 바삭함을 유지하여,새우의 고소하고 쫄깃함, 튀김의 바삭함, 그리고 칠리소스의 새콤, 달콤하면서도 매운맛을 함께 내는 상품성이 높은 새우칠리소스에 대한 것이다.
