PROBLEM TO BE SOLVED: To stably supply aubergine superior in anti-inflammatory analgesic effect so as to facilitate consumers to purchase it because the raw aubergine is vegetables superior in the anti-inflammatory analgesic effect containing the protease inhibitor of medicinal properties in the flesh, however a feed rate is less and unstable, and its acquisition is difficult for consumers.SOLUTION: Raw aubergine has a high risk of disposal due to corruption for a distributor, and therefore it is hard to supply it. However, if being the preserved food, the risk of the disposal due to the corruption is low, and therefore the supply becomes easy to enable stable supply. A pickle, frozen food and dry food are considered as the preserved food, however the activity of the protease inhibitor contained in the flesh of the aubergine aimed by the present invention is greatly damaged by the heating, and therefore the pickle using the aubergine with the raw flesh is provided as the preserved food in which the flesh is not heated in order to keep the activity.SELECTED DRAWING: Figure 1COPYRIGHT: (C)2018,JPO&INPIT【課題】 生の米茄子は、果肉に薬効成分のプロテアーゼインヒビターを含む、消炎鎮痛作用に優れた野菜であるが、消費者にとっては、供給量が少ないうえ不安定で、入手が困難であるので、本発明は、消炎鎮痛作用に優れた米茄子を、消費者が、購入しやすくなるように安定供給させる。【解決手段】 販売者にとっては、生の米茄子は腐敗による廃棄のリスクが高いので供給しにくいが、保存食品であれば、腐敗による廃棄のリスクが低いので、供給しやすくなって安定供給できる。保存食品としては、漬物、冷凍食品、乾燥食品などが考えられるが、本発明が着目している、米茄子の果肉に含まれているプロテアーゼインヒビターの活性は、加熱による損失が大きいことから、活性を保つために、果肉を加熱しない保存食品として、果肉が生の米茄子を利用した漬物を提供する。【選択図】図1
