The present invention provides a method for manufacturing processed eggs, comprising: a cuticle layer removing step of spraying a removing liquid to an inspected fresh egg to remove a cuticle layer; a fresh egg aging step of aging the fresh egg from which the cuticle layer has been removed to expand an air space; and a seasoning liquid absorbing step of spraying a seasoning liquid to the fresh egg aged in the fresh egg aging step to manufacture a seasoned egg which has absorbed the seasoning liquid. The present invention provides the method and the apparatus for manufacturing the processed eggs, which can manufacture the seasoned eggs containing various tastes and functional materials without destroying chorion of the fresh egg, particularly perform a seasoning process in a low pressure state to prevent damage to the egg and deformation of egg white, gets the seasoning liquid to be regularly absorbed in the egg by multi-spraying to be able to manufacture seasoned fresh eggs and seasoned eggs with excellent merchantable quality, reduce time consumed in manufacturing the seasoned egg to save manufacturing costs and make mass-production possible.본 발명의 가공계란 제조방법에 따르면, 검란된 생란에 제거액을 분사하여 큐티클층을 제거하는 큐티클층 제거단계; 상기 큐티클층이 제거된 생란을 숙성시켜 기실을 팽창시키는 생란 숙성단계; 및 상기 생란 숙성단계에서 숙성된 숙성생란에 조미액을 분사하여 상기 조미액을 흡수된 조미생란을 제조하는 조미액 흡수단계;를 포함한다.본 발명의 효과는, 생란의 난각을 파괴하지 않으면서, 다양한 맛과 기능성 물질을 포함하는 조미계란을 생산하는 것이 가능하며, 특히 저압상태에서 조미하여 진공으로 인한 계란의 파손 및 난백의 변형을 막고, 다중 분사로 조미액이 골고루 계란에 흡수되므로, 상품성이 좋은 조미생란 및 조미계란을 생산할 수 있으며, 조미계란 생산에 걸리는 시간을 줄여 생산비용을 절감할 수 있고, 대량생산이 가능한 가공계란 제조방법 및 제조장치를 제공할 수 있다.
