PURPOSE: A producing method of fermented figs having improved storage property is provided to age the figs with sugar for enhancing the long-term storage property. CONSTITUTION: A producing method of fermented figs comprises the following steps: mixing 100 parts of figs by weight and 50-150 parts of sugar by weight; and fermenting the mixture by adding grains culture materials. 2-30 parts of sponge gourd by weight is additionally mixed with the figs. The grain culture materials are produced by mixing and crushing the figs and grains, aging and drying the mixture at 30-40 deg C for 2-6 days, crushing the dried mixture before kneading with water, and molding the kneaded mixture into a disk shape before injecting stains for culturing.본 발명은 무화과 발효물의 제조방법에 관한 것으로서, 더욱 상세하게는 무화과를 당과 함께 숙성시켜 장기 보존성을 증대시키고 각종 효소들을 함유하여 건강에 유용한 무화과 발효물의 제조방법에 관한 것이다. 본 발명의 무화과 발효물의 제조방법은 무화과 100중량부에 대하여 당 50 내지 150중량부를 혼합하는 혼합단계와, 혼합단계에서 수득한 혼합물을 발효시키는 발효단계를 포함한다.
