[MEANS FOR SOLVING PROBLEMS] Disclosed is an anti-inflammatory composition which is produced by subjecting a raw material such as a cheese or casein to lactic acid bacterium fermentation and/or enzymatic treatment. Preferably, a raw material such as a cheese or casein is fermented with a lactic acid bacterium belonging to the genus Lactococcus and then treated with two or more enzymes including a protease or a peptidase.
