The present invention provides a process for producing a γ-aminobutyric acid-rich material, wherein the production of γ-aminobutyric acid can be effectively increased by effectively utilizing papaya containing various enzymes while fermenting the papaya by lactic acid bacteria having an ability to form γ-aminobutyric acid, as well as a γ-aminobutyric acid-rich material, and drink and food containing the same. The process for producing a γ-aminobutyric acid-rich material includes adding glutamic acid, a salt thereof or a material containing the same to a papaya squeezed juice and then fermenting it by lactic acid bacteria, thereby increasing the production of γ-aminobutyric acid.
