PURPOSE: A producing method of beef bone soup(gomtang) is provided to additionally supply vegetable protein and amino acid when adding fermented soybean paste powder. CONSTITUTION: A producing method of beef bone soup(gomtang) comprises the following steps: inserting beef bones to water, and heating to obtain a hot water extract; and adding protease to the extract and reacting for 2 hours. The hot water extract is obtained by heating the beef bones inside the water for 1~3hours in 110~130deg c. The protease is either protamax or flavourzyme.본 발명은 물에 사골을 넣고 가열하여 열수추출물을 얻는 단계; 및 상기 열수추출물에 단백질 분해효소를 처리하는 단계를 포함하는 사골곰탕의 제조방법을 제공한다.
