To provide a rice noodle powder for mechanical noodle making and enabling the production by a production apparatus similar to that of flour in the production of the rice powder noodle.
SOLUTION: The rice noodle powder is producing by soaking rice grain in an aqueous solution containing an enzyme such as hemicellulase, pectinase and pectin esterase for hydrolyzing or softening the cell membrane of the rice grain for a proper time, drying and finely pulverizing the soaked product and adding and mixing an additive (gluten for imparting stiffness to the noodle, a modified starch playing a role of a thickener and a water absorption-regulating material enabling water absorption of the gluten by preventing the water absorption by the rice powder at the mixing and stirring of the powder with water) of 30-20 wt.% based ON 70-80 wt.% of the finely pulverized rice powder subjected to a prescribed sterilization treatment.
