PROBLEM TO BE SOLVED: To provide a hot-water disinfection method for a paddy rice seed which can increase a high-temperature resistance of the seed while enabling efficient hot-water disinfection.SOLUTION: A hot-water disinfection method for a paddy rice seed of the present invention includes: a drying step for decreasing a water content of the paddy rice seed; a storing step for storing the paddy rice seed with the water content thereof decreased in the drying step; and a hot-water treatment step for disinfection by soaking the seeds into hot water, the paddy seed being stored in the storing step and having the water content being within a predetermined range. The water content of the paddy rice seed stored in the storing step is detected, and the seeds with the water content exceeding the predetermined range is subjected to a high-temperature drying to decrease the water content thereof to be within the predetermined range.
