Provided is a method for producing a rice cake by using saturated vapor and an extrusion molding system. The present invention can be used as an automated mass-production method which can produce a rice cake having uniform tissue in the field of foods in which production of rice cakes having various textures are required. The method of the present invention comprises the steps of: (a) dipping rice after washing the same (b) pulverizing the rice dipped in step (a) (c) extruding and molding the rice pulverized in step (b) by using a screw in which a kneading disk block is introduced while injecting saturated vapor to the rice and (d) cooling an extruded and molded product gained in step (c).COPYRIGHT KIPO 2017본 발명은 포화증기 및 압출성형 시스템을 이용한 떡의 제조방법을 제공한다.본 발명은 다양한 식감을 갖는 떡의 제조가 요구되는 식품 분야에서 균일한 조직의 떡을 제조할 수 있는 자동화된 대량 생산 방법으로 유용하게 사용될 수 있다.
