PURPOSE: A method of manufacturing strawberry slices is provided to maintain the same texture and color of natural raw materials, to have a crispy texture by freeze-drying to less than 7% of water content, and to improve storage property.CONSTITUTION: Strawberry is sliced to the thickness of 2-3mm after washing. The sliced strawberry is put into a freeze-dryer, and is freeze-dried. A freeze-drying is done as follow: a temperature is decreased to -40 deg. C for 3 hours while the pressure of the freeze-dryer is maintained at 5 Torr the temperature of the freeze-dryer is increased to -20 deg. C for 3 hours, and is further increased to 0 deg. C for 3 hours the temperature of the freeze-dryer is increased to 15 deg. C for 3 hours, and is further increased to 30 deg. C for 3 hours and the strawberry is dried at 30 deg. C for 33 hours, and at 28-32 deg.
