PURPOSE: A producing method of artificial rice containing medical plants is provided to prevent the deformation of the artificial rice after cooking, and to offer palatability and nutrition to consumers. CONSTITUTION: A producing method of artificial rice containing medical plants comprises the following steps: dipping grains in 5-20 deg C water for 1-6 hours； washing the grains 1-5 times using 5-20 deg C water； naturally dehydrating the washed grains for 1-3 hours, and grinding to a size smaller than 50 meshes； selecting the medical plants before drying, and crushing the medical plants into 5-49 meshes； mixing 30-70 parts of the ground grains by weight, 25-65 parts of the ground medical plants by weight, and 5-15 parts of binding aid by weight； steaming the mixture at 90-120 deg C for 10-60 minutes； extruding the steamed mixture, and cutting the extruded mixture into 0.5-10mm lengths； and drying the cut mixture for 6-24 hours.본 발명에서는 상기의 문제점을 해결하기 위해, 기능성은 유지하면서 공정을 간소화 시키고, 결착제와 약용식물의 물리적 분쇄를 적절히 조절하여 식감을 향상시킴으로 소비자들이 가정에서 쉽게 취반하여 취식할 수 있는 제품을 제공하려는 목적 달성을 위하여 곡류를 5~20℃의 물에 1~6시간 동안 침지하고 5~20℃로 유지된 실내에서 5~20℃의 물로 1~5회 세척 한 후 1~3시간 동안 자연탈수시키고 50메쉬 이하로 마쇄하는 제1공정, 약용 식물류를 선별하여 건조한 후 5~49메쉬로 분쇄하는 제2공정, 100중량부에 대하여 마쇄 곡물 30~70중량부와 분쇄 약용 식물류 25~65중량부 및 결착보조제 5~15중량부를 혼합하는 제3공정, 혼합한 원료를 90~120℃에서 10~60분간 증자하는 제4공정, 이를 노즐 직경 0.5~3mm로 압출하며 길이 0.5~10mm로 절단하는 제5공정, 성형한 것을 5~20℃의 냉풍을 이용하여 6~24시간동안 건조하는 제6공정을 특징으로 구성된 성형미의 제조방법에 관한 것이다.
