PROBLEM TO BE SOLVED: To provide a method of manufacturing a vegetable sheet that produces functional amino acids and lactic acid using fermented vegetables as raw materials, while containing the functional components of functional foods and seasonings, and being excellent in storability.SOLUTION: A method of manufacturing a vegetable sheet includes a fermentation process for mixing and fermenting auxiliary materials obtained by mixing vegetables with at least one kind of functional food selected from capsicum, ginger and turmeric, and with seasonings, a grinding process for grinding the vegetables and the raw materials after fermentation, a pasting process for kneading a binding agent into the ground vegetables and raw materials to form a paste, and a baking process for spreading the paste into a sheet shape and baking.
