PROBLEM TO BE SOLVED: To provide a method of sterilization and freshness keeping of a plant body, capable of: sterilizing bacteria existing in the plant body surely and safely and exhibiting sufficient freshness keeping effect.SOLUTION: After performing flowing water sterilization (S1) of a vegetable 1 with ozone water 5, performing sterilization process 2 of dehydration (S2), water washing (S3) the vegetable 1 sterilized in the sterilization process 2, getting rid of sterilizing compositions remained, and performing a rinsing process 3 of dehydration (S4). Thereafter, inputting (S5) a freshness-retaining agent 9, packing (S6) with a pack 10 or the like, and performing a preservation process 4 of preserving (S7) at a fixed temperature.COPYRIGHT: (C)2015,JPO&INPIT【課題】植物体に存在する細菌を確実、かつ安全に除菌でき、十分な鮮度保持効果を有する植物体の殺菌及び鮮度保持方法を提供する。【解決手段】野菜1をオゾン水5で流水殺菌(S1)を行った後、脱水処理(S2)する殺菌工程2を行い、殺菌工程2で殺菌処理された野菜1を水洗(S3)し、残存した殺菌成分を取り除いた後、脱水処理(S4)するすすぎ工程3を行う。その後、鮮度保持剤9の投入(S5)を行い、パック10等で包装(S6)し、一定の温度で保存(S7)する保存工程4を行った。【選択図】図1
