The present inventionincludes compositions and methods forpreparing micron-sized or submicron-sizedparticles by dissolving a water solubleeffective ingredient in one or more solvents；spraying or dripping droplets solvent suchthat the effective ingredient is exposed toa vapor-liquid interface of less than 50100, 150, 200, 250, 200, 400 or 500 cm-1area/volume to, e.g., increase protein stability；and contacting the droplet with a freezingsurface that has a temperature differentialof at least 30° C between the droplet andthe surface, wherein the surface freezes thedroplet into a thin film with a thickness ofless than 500 micrometers and a surface areato volume between 25 to 500 cm -1.
