This invention provides an industrialized manufacturing method of shredded cabbage, making the shredded cabbage have a superior preservability, and making its unique irritating smell significantly reduced or unable to be felt. The manufacturing method of shredded cabbage includes sterilization step, shredding step, and rinsing step, wherein the sterilization step makes shredded cabbage contacted with aqueous solution of bactericide for sterilization treatment before the cabbage are shredded the shredding step infuses clean water to the cutting part of the vegetable and shreds cabbage at the same time after the cabbage has been sterilized in the sterilization process and the rinsing step is to rinse the shredded cabbage obtained from the shredding step for more than three minutes.本發明提供一種工業化製造高麗菜絲之方法,其高麗菜絲顯示出良好之保存性、且刺激味會大幅減輕或無法被感覺到。高麗菜絲之製造方法具有以下之(殺菌步驟)、(切絲步驟)及(漂洗步驟):(殺菌步驟)使切絲前之高麗菜接觸於殺菌劑水溶液以進行殺菌處理之步驟;(切絲步驟)對殺菌步驟中經殺菌處理之高麗菜,一面對其切斷部分注入清水一面進行切絲處理之步驟;及(漂洗步驟)將切絲步驟中所得之高麗菜絲漂洗3分鐘以上之步驟。
