The present invention relates to a manufacturing method of green jujube chips using freeze-drying and, more specifically, to a manufacturing method of green jujube chips using freeze-drying to manufacture sugar-free, colorant-free and additive-free green jujube chips by collecting jujube when the jujube has the highest sugar content, green colored insides and a high moisture content, washing, cutting and freeze-drying.
