PURPOSE: Eel with watery spring onion kimchi, and a producing method thereof are provided to remove the fishy and oily taste of fresh eel, and to secure the excellent nutrition of the eel. CONSTITUTION: A producing method of eel with watery spring onion kimchi comprises the following steps: mixing spring onion, water, salt, red pepper powder, garlic, and ginger, and aging the mixture for 3~5days to obtain the watery spring onion kimchi; mixing the water, the ginger, the garlic, jujube, onion, pear, and apple, and boiling the mixture for 10~15hours to obtain sauce for eel; mixing the red pepper powder, the garlic, the ginger, starch syrup, black pepper powder, onion juice, the salt, jujube powder, and ginseng juice to obtain sauce for roasting; spreading the sauce for roasting on the eel, and firstly roasting the eel; and mixing the firstly roasted eel, the watery spring onion kimchi, and the sauce for the eel, and boiling the mixture for 10~17minutes.본 발명은 파김치장어 및 이의 제조방법에 관한 것으로, 더욱 상세하게는 장어, 파물김치, 육수를 일정비율로 혼합하여 끓임으로써 제조되는 파김치장어로서, 파물김치를 준비하는 단계와, 육수를 준비하는 단계와, 소금구이 또는 양념구이 형태로 장어 초벌구이하는 단계와, 상기 준비된 파물김치, 육수를 일정비율로 혼합한 후 상기 초벌구이장어를 첨가하여 용기에서 일정시간 동안 끓여 제조되는 파김치장어 및 이의 제조방법에 관한 것이다.
