PROBLEM TO BE SOLVED: To provide an extract of coconut which has no flavor unique to existing extracts of coconut, capable of imparting excellent and improved flavor properties to various kinds of foods and beverages.SOLUTION: A method for manufacturing an extract of coconut includes the steps of: (a) performing solvent extraction of the endosperm part of coconut； and (b) removing flavor components from the solvent extract obtained in the step (a). An extract of coconut is obtained by the manufacturing method. The extraction solvent for use in the step (a) is ethanol or an ethanol aqueous solution. The removal of the flavor components in the step (b) is performed by an active carbon treatment.【課題】既存のヤシの実抽出物が有する独特の香気を有さず、かつ様々な種類の飲食品に対して、優れた風味改善特性を付与することのできるヤシの実抽出物の提供。【解決手段】（ａ）ヤシの実の胚乳部分を溶媒抽出する工程と、（ｂ）前記（ａ）の工程で得られた溶媒抽出物から香気成分を除去する工程を含むヤシの実抽出物の製造方法及び該製造方法により得られるヤシの実抽出物。（ａ）の工程における抽出溶媒が、エタノール又はエタノール水溶液、（ｂ）の工程における香気成分の除去が活性炭処理により行われるヤシの実抽出物の製造方法。【選択図】なし
