Provided is a manufacturing method of a particulate algae extract by using an antisolvent, comprising: (a) a step for manufacturing a concentrate with a solvent or moisture content of 5% or less by drying an algae extract (b) a step for putting into the concentrate an antisolvent of which the water/octanol distribution coefficient (K_D) of the concentrate is outside the range of 0.33-0.71 (c) a step for converting VOCs, which includes off-flavor components in the concentrate, into an antisolvent phase by dispersing the concentrate at a high speed and (d) a step for removing the antisolvent converted from the VOCs and collecting the particulate algae extract. The present invention is able to replace a pulverization process in an existing algae extract powder-drying process and has extremely high efficiency to reduce or to remove off-flavor components, thereby improving the functionality of foods and cosmetics only by adding a small amount of the particulate algae extract.COPYRIGHT KIPO 2014본 발명에 의하면, (a) 해조류 추출물을 건조하여 용매 또는 수분 함량 5% 미만의 농축물을 제조하는 단계 (b) 상기 농축물의 물/옥탄올 분배계수(KD)가 0.33~0.71의 범위 밖에 있는 반용매를 상기 농축물에 투입하는 단계 (c) 상기 반용매가 투입된 상기 농축물을 고속 분산시켜 상기 농축물내의 이취성분을 포함하는 VOCs를 반용매상으로 전용하는 단계 및 (d) VOCs가 전용된 반용매를 제거하고 미세분말화된 해조류 추출물을 회수하는 단계를 포함하여 구성되는 미세분말상 해조류 추출물의 제조방법이 제공되며, 본 제조방법은 기존 해조류 추출물 분말건조 공정의 분말화 공정을 대체 할 수 있고, 이취성분의 저감 또는 제거 효율이 매우 높은 장점이 있어서, 본 발명에 의해 제조되는 미세분말상 해조류 추출물은 소량의 첨가로 식품, 향장제품 등의 기능성을 일층 향상시킬 수 있는 효과를 제공한다.
