PROBLEM TO BE SOLVED: To provide a wheat flour composition superior in spreading property of dough, having unprecedented palate feeling with crispy taste, by which confectionery having a good melting feeling is obtained and suitably used especially as wheat flour for confectionery.SOLUTION: There is provided a wheat flour composition which is wheat flour, obtained by a usual method of milling raw material wheat, consisting mainly of soft-base wheat flour and comprising the wheat flour having an average particle diameter of 10-40 μm and contains 33-100 mass% of the wheat flour having protein content of 4.5-6.8 mass%.
