PROBLEM TO BE SOLVED: To provide a manufacturing method of meat processed food having enhanced juicy feeling without deteriorating flavor even in foods containing lipid at high content.SOLUTION: There is provided a manufacturing method of meat processed food by adding lipase to foods to make aliphatic acid content per 1 mg of the foods of 13 μg to 80 μg and content of stearic acid based on total content of the lipid acid in the foods of 19 wt.% or less.
