CONSTITUTION: A producing method of processed red ginseng with the improved content of ginsenoside metabolites comprises the following: producing red ginseng using fresh ginseng； adding a starch degrading enzyme to the red ginseng for firstly hydrolyzing； reflux extracting the first hydrolysate of the red ginseng； and secondly hydrolyzing the red ginseng extract with one or more enzymes selected from cellulase, pectinase, hemicellulase, arabinase, beta-glucanase, or xylanase.본 발명은 홍삼을 2 단계에 걸쳐 효소 처리함으로써 진세노사이드 총 함량 및 진세노사이드 대사체의 함량을 증가시키는 가공 홍삼의 제조 방법에 대한 것이다.
