PURPOSE: A manufacturing method of Cactus extracts having a superior solubility using a high pressure enzyme reaction is provided to manufacture the Cactus extracts by decomposing mucilage component, thereby increasing availability of the Cactus in food and medical fields. CONSTITUTION: A manufacturing method of Cactus extracts having a superior solubility using a high pressure enzyme reaction comprises the following steps: washing and grinding the Cactus(S1); adding a mixture including pectinase and hydrocarbonoclastic enzyme and distilled water to the grinded Cactus and performing the high pressure enzyme reaction thereof (S2); heat treating the reacted products obtained by performing the high pressure enzyme reaction and inactivating the enzyme(S3); and irradiating the reacted products with the ultra high frequency(S4). In S2 step, 0.5-2 parts by weight of the pectinase, 0.5-2 parts by weight of the hydrocarbonoclastic enzyme, and 5-15 parts by weight of distilled water are added to 100 parts by weight of the grinded Cactus. The pectinase is either pectin methyl esterase or pectinase. The hydrocarbonoclastic enzyme is a mixture including arabanase, cellulase, β-glucanase, hemicellulase, and xylanase. In S2 step, the high pressure enzyme reaction is processed at 32-40 deg. Celsius and 80-120 MPa for 1-24 hours. In S3 step, The enzyme inactivation process is heated in boiling water at 90-100 deg. Celsius for 10-15 hours.
