The present invention relates to a method for preparing seasoning using fibersol-2, which is water soluble dietary fiber, and to seasoning prepared thereby. More specifically, the seasoning of the present invention: increases preference by using a water soluble dietary fiber extract extracted from corn starch beneficial for health enhances functionality and has superior physiological effects of being a low calorie component, reducing concentration of neutral fat, inhibiting elevation of insulin level and postprandial blood glucose level, etc. The method for preparing seasoning of the present invention comprises the following steps: mixing 1-2 parts by weight of onion, 0.4-0.8 part by weight of garlic, 1-2 parts by weight of pear, 0.05-0.15 part by weight of Siraitia grosvenori, and 0.2-0.4 part by weight of oatmeal with respect to 100 parts by weight of entire seasoning, and pulverizing the same preparing seasoning by mixing 30-40 parts by weight of purified water, 4.0-4.5 parts by weight of edible oil, 3-5 parts by weight of glucose, and 1.5-2.1 parts by weight of starch syrup with the seasoning mixture obtained from the previous step, and sterilizing the same at a temperature equal to or greater than 100°C for 80-120 minutes and mixing 0.8-1.0 part by weight of water soluble dietary fiber extract obtained from corn starch with the obtained seasoning for spicy rib with respect to 100 parts by weight of entire seasoning.COPYRIGHT KIPO 2016본 발명은 수용성 식이 섬유인 파이버솔(Fibersol)-2를 이용한 양념소스의 제조방법 및 이를 이용한 양념 소스에 관한 것으로서, 더욱 상세하게는 건강에 유용한 옥수수 전분으로부터 추출된 수용성 식이섬유 추출물을 이용하여 기호도를 증대시키고, 저 칼로리 성분이며 중성 지방의 농축을 감소시키고, 식후 혈당치 및 인슐린치의 상승 속도를 억제하는 등으로 뛰어난 생리효과를 갖고 기능성을 향상시킬 수 있는 갈비 양념소스의 제조방법 및 이를 이용한 갈비 양념소스에 관한 것이다.
