PURPOSE: Salad dressing using fruits of medical plants, and a producing method thereof are provided to offer the effect of lowering the blood sugar cholesterol of eaters. CONSTITUTION: A producing method of salad dressing using fruits of medical plants comprises the following steps: mixing a dressing base and a yam physical property improver in a weight ratio of 4:1-2； and mixing 25-65wt% of mixture, 10-35wt% of mulberry pulp, and 30-50wt% of Schisandra chinensis syrup. The Schisandra chinensis syrup is obtained by mixing Schisandra chinensis and sugar in a weight ratio of 1:0.8-1.2, and aging the mixture for 30 days before filtering. The dressing base contains 100 parts of plain yogurt by weight and 5-25 parts of mayonnaise or fresh cream by weight.본 발명은 약용작물 열매를 이용한 샐러드 드레싱 및 이의 제조방법에 관한 것으로서, 구체적으로 설명하면, 드레싱 베이스, 오디 과육, 오미자청, 및 마 물성개량제를 포함하는 샐러드 드레싱에 관한 것이다. 본 발명의 샐러드 드레싱은 맛과 향이 좋을 뿐만 아니라, 칼로리가 낮으면서도 강장 효과가 있는 기능성 건강 식품이다.
