The present invention relates to a method for producing overcooked rice snack using nipa palm flower stalk, and overcooked rice snack thereby. More specifically, the method comprises the following steps: (a) mixing rice powder and nipa palm flower stalk powder； (b) molding the mixed mixture into a grain size； (c) mixing the molded article with rice, (d) cooking the mixed rice； and (e) pressing and heating the cooked rice to prepare overcooked rice.
