PROBLEM TO BE SOLVED: To provide a granular mixed seasoning excellent in solubility into hot water, capable of stable automatic filling into a packaging container, excellent in long term storage property and excellent in richness of source and texture after cocking, and a manufacturing method capable of easily manufacturing the granular mixed seasoning.SOLUTION: A solid roux, containing an oil and fat which is solid at room temperature and a starch which is pregelatinized by water-adding and heating as essential components and manufactured by a method including a process of cooling and solidifying after heating and mixing at a temperature more than a melting temperature of the oil and fat which is solid at room temperature, is pulverized while mixing with a powder for mixing and pulverizing consisting of food raw materials such as animal and plant dry pulverized processed products such as spice satisfying special conditions, dry powered products of various liquid raw materials such as beef extract powder and soy source powder, seasonings such as salt and sugar, flavors, thickening polysaccharides and dyes. A granular mixed seasoning 1 has a percentage of parts passing a sieve with openings of 5 mm of 70 mass% or more, and the powder for mixing and pulverizing 4-1 adheres to a surface 3 thereof or 4-2 exists near the surface dispersedly.COPYRIGHT: (C)2015,JPO&INPIT【課題】熱水中への溶解性に優れ、包装容器への安定した自動充填が可能であり、長期保存性にも優れ、調理後のソースのコクや食感に関しても優れている粉粒状混合調味料および粉粒状混合調味料を容易に製造できる製造方法の提供。【解決手段】常温で固形の油脂および加水加熱によりα化する澱粉を必須成分とし、前記常温で固形の油脂が融解する温度以上で加熱混合した後に冷却固化する工程を含む方法により製造される固形ルウを、特定の条件を満たす香辛料などの動植物の乾燥粉砕加工物、ビーフエキスパウダー、醤油パウダーなどの各種液体原料の乾燥粉末化物、塩や砂糖などの調味料粉末、香料、増粘多糖類、色素などの食品原料からなる混合・粉砕用粉体と混合しながら粉砕する。粉粒状混合調味料1は、目開き5mmの篩をパスする部分の割合が70質量%以上であり、混合・粉砕用粉体4-1がその表面3に付着ないし4-2が表面近傍に分散して存在している。【選択図】図1
