The present invention relates to a method for making udon noodles in a new type, which is to prepare new udon noodles providing good flavor to meet excellent preference of customers, thereby being sufficient to satisfy selective taste of customers； and an udon making method. According to the present invention, the udon making method comprises: a step (1) of mixing flour and sweet potato starch by a weight ratio of 6.5 to 7:3 to 3.5； a step (2) of mixing water and salt by a weight ratio of 12:1 to make saline water； a step (3) of kneading the flour and the sweet potato starch mixed in the step (1) with the saline water made in the step (2) to make udon noodle paste； and a step (4) of making udon noodles with the udon noodle paste made in the step (3).본 발명은 풍미가 좋아서 소비자들의 기호도가 우수하고 따라서 소비자들의 까다로운 입맛을 만족시키기에 충분한 새로운 우동면을 제조할 수 있는 새로운 방식의 우동면 제조방법 및 우동 제조방법에 관한 것이다. 본 발명은 (1) 밀가루와 고구마전분을 6.5~7:3~3.5 중량비로 혼합하는 단계； (2) 물과 소금을 12:1중량비로 혼합하여 소금물을 만드는 단계； (3) 상기 (1)단계에서 혼합한 밀가루와 고구마전분에 상기 (2)단계에서 만든 소금물로 반죽하여 우동면 반죽을 만드는 단계； 및 (4) 상기 (3)단계에서 만든 우동면 반죽으로 우동면을 제면하는 단계；를 포함하는 것을 특징으로 하는 우동면 제조방법과 이를 이용한 우동 제조방법에 관한 것이다.
