The present invention relates to a composition for improving liver functions and recovering fatigue comprising an apple pomace ethanol extract as an active ingredient. The apple pomace ethanol extract increases exercise performance time, inhibits accumulation of fatigue substances in blood and muscles, and improves liver functions, thereby being able to be applied to products improving liver functions and recovering fatigue such as pharmaceutical compositions, fermented milk, beverages, functional foods, etc. To this end, the apple pomace ethanol extract is extracted by the following steps: a) mixing apple pomace with distilled water having a weight 20 times that of the apple pomace, and hot water washing the same at a temperature of 85°C b) collecting the apple pomace, hot water washed in the step a), to hot air dry the same c) mixing 95% ethanol having a weight 10 times that of the apple pomace, hot air dried in the step b), with the hot air dried apple pomace and extracting the resultant product for 16 hours or more at 25°C d) filtering the apple pomace ethanol extract of the step c) by using perlite and e) mixing a solid content of vacuum evaporated apple pomace ethanol extract with maltodextrin at a weight ratio of 4 : 1 after vacuum evaporating the apple pomace ethanol extract filtered in step d), and freeze drying the resultant product.COPYRIGHT KIPO 2016본 발명은 사과박 주정 추출물을 유효성분으로 함유하는 간기능 개선 및 피로 회복용 조성물에 관한 것으로서, 본 발명의 사과박 주정 추출물은 운동수행시간을 증진시키고, 혈중 및 근육 내 피로물질의 축적을 억제하는 효과 및 간 기능 개선 효과가 있으므로 약학적 조성물, 발효유, 음료, 기능성 식품 등 간 기능 개선 및 피로회복 효과를 갖는 제품에 응용될 수 있다.
