PURPOSE: A method of manufacturing crab processed foodstuff is provided to intake the crust of crabs by softening, aging and pulverizing the crust of crabs and to reduce the amount of waste by using the crust of crabs which was wasted.CONSTITUTION: Washed crabs are immersed in the acetic acid to soften the crust. The crabs in which crust is softened are aged. The aged crabs are pulverized. Spice is added to the pulverized crabs. The aging process is aged by dipping crabs in a soy sauce. The acetic acid is that pH 2.0-3.5 of the vinegar is diluted with 5-10 times water. Softened crabs are washed with saline water to remove sourness of the acetic acid. Washed crabs are dipped in the acetic acid at -1deg.C for 3-5 hours.
