PURPOSE: A coagulant for manufacturing bean-cured with excellent water holding feature, elasticity and taste, and a manufacturing method thereof are provided to offer tofu with excellent flavor, taste, elasticity and water holding feature by minimizing an amount of incidental components and by delaying a coagulation rate of a quick-acting coagulant. CONSTITUTION: A gelling material and water are mixed, and a gelling material aqueous solution of 0.1~10% is manufactured. A quick-acting coagulant is thrown in the gelling material aqueous solution and is dissolved. The gelling material aqueous solution, in which the quick-acting coagulant is dissolved, is cooled at a temperature of 0~40°;C and gets gels. The coagulating agent is composed of gelling material 0.1~10 weight%, quick-acting coagulant 3~75 weight%, and water, the remnant. The gelling material is a mixture of at least one or two selected among agar, gelatin, carrageenan, alginate, pectin or starch. A mixture of at least one or two selected among sugar, crystalline fructose, high fructose corn syrup, oligo saccharide, carboxyl methyl cellulose, arabic gum, guar gum, locust bean gum, xanthan gum, is added to the gelling material as an auxiliary agent. The quick-acting coagulant is a mixture of at least one or two selected among magnesium chloride, brine, concentrated seawater, seawater, calcium chloride, lactic acid and salt. In the gelling material, a mixture of at least one or two selected among sodium chloride, potassium chloride and magnesium sulfate is included more.본 발명은 풍미, 탄력, 식감, 수율이 우수한 두부를 제조하기 위해 사용되는 두부 제조용 응고제 및 그 제조방법에 관한 것으로,이를 위하여 본 발명은 두부의 제조시 두유의 응고를 위해 사용되는 응고제에 있어서, 상기 응고제는 겔상 물질 내에 속효성 응고제가 함유되어 두부 제조시 상기 속효성 응고제가 서서히 용출되는 것을 특징으로 하는 두부 제조용 응고제를 제공한다.이러한 두부 제조용 응고제는 불필요한 성분의 사용을 줄이면서도 응고반응 속도를 지효화하여 풍미, 탄력, 식감, 수율 등이 모두 우수한 두부를 제조할 수 있다.
