PROBLEM TO BE SOLVED: To provide cheeses having characteristics inherent to pasta filata cheese having good resilience, and a fresh and milky flavor.SOLUTION: The manufacturing method of cheeses includes: a coagulation step of coagulating raw material milk a curd preparation step of preparing curd by separating whey after the coagulation step a heat kneading step of adding a molten salt and a salt to the curd obtained in the curd preparation step so as to be heat kneaded and a molding step of molding the curd obtained in the heat kneading step.
