PURPOSE: A producing method of cake including fermented and steamed glutinous rice cake is provided to offer the soft texture of the cake and the chewy texture of the rice cake to users at the same time. CONSTITUTION: A producing method of cake including fermented and steamed glutinous rice cake comprises the following steps: kneading materials for obtaining a cake sheet including flour and starch to obtain first dough; steaming rice cake ingredients including glutinous rice and modified starch to obtain the fermented and steamed glutinous rice cake; mounting the fermented and steamed glutinous rice cake on the first dough; molding the cake sheet material mixture to obtain second dough, and layering the second dough over the fermented and steamed glutinous rice cake; baking the molded product at 150-200 deg C for 20-40 minutes; and injecting supplementary materials into the baked cake.본 발명은 내부에 찹쌀 증편이 포함된 케이크의 제조 방법 및 상기 방법에 의해 제조된 케이크에 대한 것으로서, 보다 상세하게는 내부에 찹쌀 소재의 찹쌀 증편이 포함되어, 케이크의 부드러움과 함께 쫄깃한 식감을 느낄 수 있는 새로운 형태의 케이크 제조 방법을 제공하고, 상기 방법으로 제조된 케이크는 케이크 내부에 포함된 찹쌀 증편의 보존성을 증가시킬 수 있으며, 아울러 쌀 소비 증진과 영양학적으로도 향상된 제과류를 제공할 수 있다.
